For the salad
  • 2 pounds red skinned potatoes Choose uniformly sized potatoes for even cooking.
  • 1 cup mayonnaise Can substitute with Greek yogurt or vegan mayo.
  • 1 tablespoon Dijon mustard
  • 1 tablespoon white vinegar
  • 1 cup celery, diced Add some crunch with diced pickles or bell peppers.
  • 1 cup red onion, diced Can substitute with green onions for a milder flavor.
  • 1/4 cup fresh parsley, chopped For garnish and additional flavor.
  • Salt and pepper to taste Essential for flavor enhancement.

Preparation
  1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let them cool.
  2. Once cooled, cut the potatoes into bite-sized pieces and transfer them to a large bowl.
  3. In a separate bowl, mix together mayonnaise, Dijon mustard, white vinegar, salt, and pepper.
  4. Add the diced celery, red onion, and parsley to the bowl with the potatoes.
  5. Pour the dressing over the potato mixture and gently mix until well combined.
  6. Chill in the refrigerator for at least 1 hour before serving.

Notes

This potato salad can be made a day or two in advance. It actually tastes better after sitting for a bit. Store in an airtight container for up to 3 days in the fridge.
