Ingredients
  

Crepe Batter
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1.5 cups milk
  • 2 tablespoons melted butter
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
Filling
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 cup fresh raspberries

Method
 

Preparation
  1. In a mixing bowl, whisk together the flour, eggs, milk, melted butter, sugar, and vanilla extract until smooth.
  2. Heat a non-stick skillet over medium heat and pour in a small ladle of batter, swirling to coat the bottom of the pan.
Cooking
  1. Cook for 1-2 minutes until the edges begin to lift, then flip and cook for another minute.
  2. Remove from the pan and repeat with the remaining batter.
  3. For the filling, whip the heavy cream with powdered sugar until soft peaks form.
Assembly
  1. Spread a layer of vanilla cream on each crepe, top with fresh raspberries, and fold or roll the crepes.
  2. Serve warm and enjoy!

Notes

For added sweetness, dust with powdered sugar or drizzle with maple syrup or chocolate sauce before serving. Store leftovers in an airtight container in the fridge for up to two days.
