Ingredients
  

Base and Topping
  • 1.5 cups all-purpose flour
  • 0.5 cups granulated sugar
  • 0.5 teaspoons baking powder
  • 0.25 teaspoons salt
  • 0.5 cups unsalted butter, softened For a flakier crumb topping, use chilled butter.
Filling
  • 1 cup fresh or frozen raspberries Frozen raspberries can be used without thawing.
  • 1 tablespoon lemon juice
Finishing Touch
  • 0.25 cups powdered sugar For dusting after cooling.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a mixing bowl, combine flour, granulated sugar, baking powder, and salt. Cut in butter until the mixture is crumbly.
  3. Press half of the mixture into the bottom of the prepared baking dish.
  4. In another bowl, toss raspberries with lemon juice and sprinkle evenly over the crust.
  5. Crumble the remaining flour mixture on top of the raspberries.
Baking
  1. Bake for 30-35 minutes, until the top is golden brown.
Finishing
  1. Allow to cool before dusting with powdered sugar and cutting into bars.

Notes

These bars can be stored in an airtight container for 4-5 days in the fridge. They can also be frozen for up to 3 months. To reheat, microwave for a few seconds or thaw at room temperature. Tips include adding a pinch of cinnamon for extra flavor or swapping raspberries for other berries.
