Ingredients
  

Wet Ingredients
  • 3 pieces ripe bananas The riper, the sweeter!
  • 1/4 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup Can swap for maple syrup for a different flavor.
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup whole wheat flour Can be substituted with oat flour or all-purpose flour.
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional) Adding nutmeg can give a seasonal twist.
Mix-ins (optional)
  • 1/4 cup chopped nuts or chocolate chips Dark chocolate chips can add a decadent treat.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, mash the bananas until smooth.
  3. Stir in applesauce, honey (or maple syrup), and vanilla extract.
Mixing
  1. In another bowl, combine whole wheat flour, baking soda, baking powder, salt, and cinnamon.
  2. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  3. If desired, fold in nuts or chocolate chips.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow to cool before slicing and serving.

Notes

Best enjoyed fresh but can be stored at room temperature for about 5 days or up to a week in the fridge. For longer storage, freeze for up to 3 months. Reheat before serving.
