Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, whisk together the eggs and milk until well combined.
  3. Stir in the chopped spinach, feta cheese, salt, and pepper.
  4. If you're feeling fancy, fold in any optional ingredients like diced bell peppers or onions.
  5. Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes or until the muffins are set and lightly golden on top.
  7. Allow to cool slightly before removing from the tin. Enjoy warm or store for later!
