- Mix flour, salt, and cayenne pepper. Cut in the butter until it resembles crumbs.
- Add ice water gradually to form a dough; chill for 30 minutes.
- Roll out the dough, fit it into a 9-inch pie dish, and crimp the edges; chill for another 30 minutes.
- Blind bake the crust with weights at 425°F for 25-27 minutes; let cool.
Filling and Baking
- In a bowl, whisk together eggs, cream, milk, salt, pepper, and nutmeg.
- Stir in spinach, cheese, and onion.
- Pour the mixture into the crust; bake for 45 minutes until set.
- Let cool at room temperature and serve garnished with chives.
Notes
For a crispier crust, try pre-baking a few extra minutes. Swap out cheeses for something different. Make it ahead; it's better the next day when the flavors have time to mingle.
