Ingredients
  

For the crust
  • 1 1/4 cups flour
  • 1/2 tsp salt
  • 1/2 tsp cayenne pepper
  • 1 cup cold butter (cubed)
  • 3-4 tbsp ice water
For the filling
  • 4 eggs
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp nutmeg
  • 1 cup spinach (chopped)
  • 1 cup cheddar cheese
  • 1/4 cup onion (diced)
  • Optional: Chives or parsley for garnish

Method
 

Preparation
  1. Mix flour, salt, and cayenne pepper. Cut in the butter until it resembles crumbs.
  2. Add ice water gradually to form a dough; chill for 30 minutes.
  3. Roll out the dough, fit it into a 9-inch pie dish, and crimp the edges; chill for another 30 minutes.
  4. Blind bake the crust with weights at 425°F for 25-27 minutes; let cool.
Filling and Baking
  1. In a bowl, whisk together eggs, cream, milk, salt, pepper, and nutmeg.
  2. Stir in spinach, cheese, and onion.
  3. Pour the mixture into the crust; bake for 45 minutes until set.
  4. Let cool at room temperature and serve garnished with chives.

Notes

For a crispier crust, try pre-baking a few extra minutes. Swap out cheeses for something different. Make it ahead; it's better the next day when the flavors have time to mingle.
