  • 1 package Dumplings (potstickers) Can substitute with frozen dumplings.
  • 4 cups chicken or vegetable broth Use vegetable broth for a vegan option.
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 cups mixed greens (spinach, bok choy) Other greens like kale or chard can also be used.
  • 1 cup mushrooms, sliced
  • 2 pieces green onions, sliced For garnish.
  • Soy sauce to taste Use gluten-free soy sauce for a gluten-free version.
  • Sesame oil For sautéing.
  • Salt and pepper to taste

Method
 

Preparation
  1. Heat a drizzle of sesame oil in a large pot over medium heat.
  2. Add the minced garlic and grated ginger, sautéing until fragrant.
Cooking
  1. Pour in the broth and bring it to a simmer.
  2. Add the dumplings to the pot and cook according to package instructions.
  3. Once the dumplings are cooked, stir in the mushrooms and mixed greens, cooking until the greens are wilted.
  4. Season with soy sauce, salt, and pepper to taste.
Serving
  1. Serve hot, garnished with sliced green onions.

Notes

Add greens at the end to keep them vibrant. Try adding chili flakes for a spicy kick. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months. Reheat on the stove when ready to eat.
