Ingredients
  

Noodles and Meat
  • 8 oz wide Lo Mein noodles, cooked and rinsed
  • 1 lb ground pork can substitute with ground turkey or chicken
  • 1 tablespoon peanut oil
  • 1/4 cup sliced green onions plus 2 tablespoons for garnish
Sauce Ingredients
  • 1/2 cup low-sodium chicken broth can be replaced with vegetable broth for vegan option
  • 3 tablespoons mirin
  • 2 tablespoons dark soy sauce or coconut aminos for gluten-free version
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha adjust to taste
Vegetable Mix
  • 4 cups coleslaw mix for added crunch

Method
 

Preparation
  1. Cook the Lo Mein noodles according to package instructions, then set aside.
  2. In a large skillet, brown the ground pork with 1/4 cup of green onions in peanut oil until cooked through.
Combine Ingredients
  1. Whisk together the chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha in a bowl.
  2. Add the cooked noodles and coleslaw mix to the skillet, mixing it all together.
  3. Toss everything for 2-3 minutes until well coated in the sauce.
Serve
  1. Garnish with the remaining green onions before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of broth for best results.
