  • 2 medium potatoes, peeled and cubed
  • 1 medium cauliflower, cut into florets
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 chopped onion
  • 2 chopped tomatoes
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • to taste Salt
  • for garnish Fresh cilantro

Method
 

Cooking
  1. Heat the oil in a pan over medium heat. Add cumin seeds and let them sizzle.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in ginger-garlic paste and sauté for another minute.
  4. Add chopped tomatoes and cook until soft.
  5. Add turmeric, cumin, and coriander powders, mixing well.
  6. Toss in the potatoes and cauliflower florets, stirring to coat them in the spice mixture.
  7. Add salt and a splash of water, cover, and cook for about 20 minutes until the vegetables are tender.
  8. Remove the lid, sprinkle garam masala, and stir gently.
  9. Garnish with fresh cilantro and serve with basmati rice, roti, or naan.

Notes

This dish keeps well in the fridge for 3-4 days. For longer storage, you can freeze it for up to 3 months. Reheat on the stove with a splash of water.
