Preparation
- Preheat your oven to 375°F (190°C).
- Fry bacon in a skillet until crispy, about 8 minutes, then drain on paper towels and chop into small pieces.
- Carefully roll out the pie crust and fit it into a pie dish, trimming any excess hanging over the edges.
- Prick the bottom of the crust with a fork to prevent bubbling during baking.
- In a mixing bowl, crack the eggs, add the heavy cream, and whisk until well combined.
- Stir in salt, pepper, and nutmeg until blended smoothly.
Assembly
- Spread the chopped bacon evenly across the pie crust.
- Sprinkle the shredded Swiss cheese over the bacon.
- Slowly pour the egg mixture over the bacon and cheese.
- Sprinkle the chopped chives on top.
Baking
- Bake in the preheated oven for 35 to 40 minutes, until the center is set and the top is golden brown.
- Let the quiche cool for 10 minutes before slicing and serving.
Notes
Serve with a simple side salad and a drizzle of balsamic vinaigrette for a complete meal. Can be made in advance and stored in the fridge or frozen for later.
