Ingredients
  

Omelette Base
  • 2 large large eggs
  • 1/4 cup cooked beef, sliced Can substitute with cooked chicken or mushrooms.
  • 1/4 cup bell peppers, diced Any color bell pepper works.
  • 1/4 cup onions, diced Use yellow or white onions for sweetness.
  • 1/4 cup cheese (cheddar or provolone) Provolone gives an authentic flavor.
  • Salt and pepper to taste
  • Butter or oil for cooking

Method
 

Preparation
  1. In a bowl, whisk the eggs with salt and pepper.
  2. Heat a skillet over medium heat and add butter or oil.
Cooking
  1. Sauté the onions and peppers until soft.
  2. Add the sliced beef to the skillet and cook for an additional minute.
  3. Pour the whisked eggs into the skillet, ensuring they cover the beef and veggies.
  4. Let the omelette cook undisturbed until the edges firm up.
  5. Sprinkle cheese on one half of the omelette and fold the other half over the cheese.
  6. Cook for a minute more until the cheese melts, then slide the omelette onto a plate and serve.

Notes

This omelette keeps well in the fridge for up to three days. Store in an airtight container. Can be reheated in the microwave.
