  • 4 pieces boneless, skinless chicken breasts
  • 1 pound baby potatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth
  • 2 tablespoons olive oil
  • to taste Fresh parsley for garnish

Method
 

Preparation
  1. In a large bowl, combine garlic, Parmesan cheese, Italian seasoning, salt, pepper, chicken broth, and olive oil. Mix well.
  2. Place the halved baby potatoes at the bottom of the crockpot.
  3. Layer the chicken breasts on top of the potatoes.
  4. Pour the garlic Parmesan mixture over the chicken and potatoes.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and the potatoes are tender.
  6. Garnish with fresh parsley before serving.

Notes

For an even richer sauce, add a splash of heavy cream during the last hour of cooking. Red pepper flakes can be added for heat. Leftovers last about 3-4 days in the fridge and can be frozen for up to 3 months.
