  • 1 teaspoon vanilla extract
  • 1/2 cup jelly or jam Any flavor can be used.
  • 1/2 teaspoon baking soda
  • 1 pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the peanut butter, sugar, egg, vanilla extract, baking soda, and a pinch of salt. Mix until smooth.
  3. Scoop tablespoons of dough and roll them into balls. Place them on a baking sheet lined with parchment paper.
  4. Press your thumb into the center of each ball to create a well for the jelly.
  5. Fill each well with a small amount of jelly or jam.
Baking
  1. Bake for 10-12 minutes until the edges are lightly golden.
  2. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Serve warm paired with a glass of cold milk or a cozy cup of tea. Store in an airtight container for 5-7 days at room temperature or up to two weeks in the fridge.
