  • 2 large eggs At room temperature for better mixing.
  • 1/2 teaspoon vanilla extract Enhances the flavor of the muffins.
Dry Ingredients
  • 1 cup all-purpose flour Can use whole wheat flour for a healthier version.
  • 1/2 cup sugar Can be substituted with honey or maple syrup.
  • 1 tablespoon baking powder Fresh baking powder ensures a better rise.
  • 1/2 teaspoon salt Balances the sweetness.
Fruits
  • 1 cup diced fresh peaches Use ripe peaches for best flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mix the cottage cheese, milk, vegetable oil, and eggs until well combined.
  3. In another bowl, combine the flour, sugar, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Gently fold in the diced peaches and vanilla extract.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Baking
  1. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow to cool for a few minutes before serving.

Notes

These muffins can be drizzled with honey or maple syrup and served with Greek yogurt. They store well in the fridge for 3-5 days or can be frozen for up to 3 months.
