Ingredients
  

For the crust
  • 2 cups crushed graham crackers
  • 1/2 cup butter, melted
For the cheesecake filling
  • 2 cups cream cheese, softened Let it soften for easier mixing.
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
For the peach topping
  • 2 cups peaches, peeled and sliced Use ripe peaches for best flavor.
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup brown sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a bowl, combine crushed graham crackers and melted butter.
  3. Press the mixture into the bottom of the prepared baking dish to form a crust.
Making the filling
  1. In a large mixing bowl, beat the cream cheese and sugar together until smooth.
  2. Add the eggs one at a time, mixing well after each addition.
  3. Stir in the vanilla extract and pour the cream cheese mixture over the crust.
Peach topping
  1. In another bowl, mix the sliced peaches with cinnamon, nutmeg, and brown sugar.
  2. Spoon the peach mixture over the cheesecake layer.
Baking
  1. Bake in the preheated oven for 30-35 minutes or until the cheesecake is set and slightly golden.
  2. Allow to cool, then refrigerate for at least 4 hours before slicing into bars.

Notes

These cheesecake bars taste even better the next day after chilling overnight. They can also be made with other fruits like berries or apples.
