Ingredients
  

For the Topping
  • 4 tablespoons cold unsalted butter Melted in the baking dish
  • 1/2 cup granulated sugar Divided use
  • 1/2 cup all-purpose flour Plus 2 tablespoons
  • 1 teaspoon baking powder
  • 1/2 cup half-and-half Can substitute with almond milk for a lighter version
For the Filling
  • 2 pounds fresh peaches (about 4-6 ripe peaches, sliced)
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon ground cinnamon Add more for flavor if desired

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Place cold butter in an 8-inch square baking dish and melt in the oven.
  2. Peel and slice the peaches into wedges. Combine them with 2 tablespoons of sugar, lemon juice, and cinnamon in a bowl.
  3. In another bowl, whisk together the remaining sugar, flour, and baking powder; gently stir in half-and-half.
  4. Spoon the batter over the melted butter without mixing. Pour the peach mixture on top without stirring.
  5. Bake for 35-40 minutes until golden brown.

Notes

Serve warm with vanilla ice cream, a sprinkle of cinnamon, or fresh mint. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 3 months.
