  • 4 cups sliced peaches
  • 1 cup sugar Divided: Use 1/2 cup for filling and 1/2 cup for biscuit topping
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
Biscuit Topping Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the sliced peaches, 1/2 cup sugar, cinnamon, and lemon juice; transfer this mixture to a greased baking dish.
  3. In another bowl, whisk together the flour, baking powder, salt, remaining sugar, melted butter, and milk until smooth.
  4. Pour the biscuit mixture over the peaches, spreading it evenly.
Baking
  1. Bake for 30-40 minutes or until the topping is golden brown and the filling is bubbly.
  2. Serve warm and enjoy!

Notes

Pro tip: Don’t skip greasing your baking dish! If using frozen peaches, let them thaw and drain excess liquid. For a healthy twist, substitute coconut oil for butter and almond milk for regular milk. Add a scoop of vanilla ice cream or a dollop of whipped cream for serving.
