Ingredients
  

Main Ingredients
  • 4 pieces boneless, skinless chicken breasts You can use frozen breasts, just add extra cooking time.
  • 1 packet ranch dressing mix
  • 1 packet taco seasoning Adjust spice level as desired.
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 can diced tomatoes, undrained
  • 1 can diced green chilies

Method
 

Preparation
  1. Place the chicken breasts in the bottom of the Crock Pot.
  2. Sprinkle the ranch dressing mix and taco seasoning over the chicken.
  3. Add the black beans, corn, diced tomatoes, and green chilies on top of the chicken.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and shreds easily with a fork.
Serving
  1. Serve warm, optionally topped with cilantro and sour cream.

Notes

Party Chicken keeps well in the fridge for about 3-4 days in an airtight container. For longer storage, freeze it for up to 3 months. Reheat before serving. Consider using chicken thighs for extra juiciness or adding crushed tortilla chips for crunch.
