Oven-Baked Salmon Sushi Bites

Ingredients
  

For the Sushi Bites
  • 1 cup sushi rice Rinse under cold water until clear.
  • 1.5 cups water
  • 8 oz sushi-grade salmon, diced Ensure it's fresh.
  • 4 sheets nori (seaweed) Cut in half.
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 whole avocado, sliced Choose a ripe avocado.
  • 2 tablespoons green onions, sliced
  • to taste Salt and pepper Adjust seasoning to your preference.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Rinse the sushi rice under cold water until the water runs clear.
  3. In a rice cooker or pot, combine the rice and water. Cook according to rice cooker instructions or bring to a boil, then reduce to a simmer. Cover and cook for 15-20 minutes until the water is absorbed. Let the rice cool slightly.
  4. In a bowl, mix the diced salmon with soy sauce, sesame oil, salt, and pepper.
Assembly
  1. Cut the nori sheets in half and place them on a baking sheet.
  2. Spread a layer of sushi rice on each nori half, leaving some space at the edges.
  3. Add a line of the salmon mixture and a few slices of avocado on top of the rice.
  4. Roll the nori tightly around the filling and slice the roll into bite-sized pieces.
Cooking
  1. Bake the sushi bites in the preheated oven for 10-12 minutes or until crispy.
  2. Serve warm and enjoy!

Notes

These bites are best enjoyed fresh, but can be refrigerated for about 2 days or frozen tightly for best quality. Reheat in the oven for 5 minutes before serving for restored crunch.
