Oreo Brookies

Ingredients
  

For the brownie layer
  • 1 cup unsalted butter, softened Make sure the butter is just softened, not melted.
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder You can substitute with chocolate cake mix if needed.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips Feel free to swap with white chocolate or peanut butter chips.
  • 1 cup crushed Oreo cookies

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually blend the dry ingredients into the wet mixture.
  6. Fold in the chocolate chips and crushed Oreos.
  7. Pour half of the brownie batter into the prepared baking pan and spread evenly.
  8. Layer with cookie dough over the brownie layer.
  9. Pour the remaining brownie batter on top and spread evenly.
Baking
  1. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  2. Let cool before cutting into squares and serving.

Notes

Serve warm, topped with a scoop of vanilla ice cream and a drizzle of chocolate sauce for extra flair. Store in an airtight container for about 5 days at room temperature, or up to 2 weeks in the fridge.
