Ingredients
  

Dry Ingredients
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 teaspoons ground cinnamon
Wet Ingredients
  • 3 large eggs
  • 1 cup vegetable oil
  • 2 1/4 cups granulated sugar
  • 3 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 1 cup chopped walnuts optional

Method
 

Preparation
  1. Preheat your oven to 325°F (165°C) and grease and flour two 8x4 inch loaf pans.
  2. In a large bowl, sift together the flour, salt, baking soda, baking powder, and cinnamon.
  3. In another bowl, beat the eggs, then mix in the vegetable oil, sugar, and vanilla until well combined.
  4. Gradually stir the sifted ingredients into the wet mixture.
  5. Fold in the grated zucchini and nuts until just combined. Be careful not to over-mix!
  6. Divide the batter evenly between the prepared loaf pans.
Baking
  1. Bake for 60 to 70 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the loaves cool in the pans for about 10 minutes, then remove from pans and cool completely on a wire rack.

Notes

Use fresh zucchini for best flavor. Store at room temperature for up to 3 days or in the fridge for a week. Freeze for up to 3 months.
