Preparation
- Preheat your oven to 350 degrees and grease a 9 x 13 inch baking pan with flour.
- Sift together the flour, baking soda, cinnamon, and salt into a bowl.
- In a separate large bowl, beat the eggs and oil for 1 minute.
- Add the sugar and mix until light and fluffy, about 2 minutes.
- Incorporate the vanilla and mix just until combined.
- Fold the grated carrots into the egg mixture.
- Gradually fold half of the flour mixture into the egg mixture until combined.
- Then fold in the remaining flour mixture.
- Beat the batter for 1 minute to make it nice and smooth.
- Pour the batter into your prepared baking pan.
Baking
- Bake for 25-35 minutes or until a toothpick comes out clean from the center.
- Once baked, cool completely.
- Frost with Homemade Cream Cheese Frosting.
Notes
Leftovers keep beautifully in an airtight container in the fridge for up to 5 days. For longer storage, freeze slices for about 2-3 months.
