  • 2.5 cups grated carrot (finely grated)
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 4 large eggs
  • 1 cup vegetable oil
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
Frosting Ingredients
  • 3 cups powdered sugar
  • 8 ounces cream cheese (softened)
  • 1 stick butter (softened)
  • 2 teaspoons pure vanilla extract
  • 0.25 cups walnuts (chopped, optional)

Method
 

Preparation
  1. Preheat your oven to 350 degrees and grease a 9 x 13 inch baking pan with flour.
  2. Sift together the flour, baking soda, cinnamon, and salt into a bowl.
  3. In a separate large bowl, beat the eggs and oil for 1 minute.
  4. Add the sugar and mix until light and fluffy, about 2 minutes.
  5. Incorporate the vanilla and mix just until combined.
  6. Fold the grated carrots into the egg mixture.
  7. Gradually fold half of the flour mixture into the egg mixture until combined.
  8. Then fold in the remaining flour mixture.
  9. Beat the batter for 1 minute to make it nice and smooth.
  10. Pour the batter into your prepared baking pan.
Baking
  1. Bake for 25-35 minutes or until a toothpick comes out clean from the center.
  2. Once baked, cool completely.
  3. Frost with Homemade Cream Cheese Frosting.

Notes

Leftovers keep beautifully in an airtight container in the fridge for up to 5 days. For longer storage, freeze slices for about 2-3 months.
