Ingredients
  

Cookies
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups rolled oats
Cream Filling
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In another bowl, combine the flour, baking soda, cinnamon, and salt. Gradually add this to the butter mixture, mixing well.
  5. Stir in the oats until evenly combined.
Baking
  1. Drop by tablespoonfuls onto ungreased baking sheets.
  2. Bake for 10-12 minutes until the edges are lightly golden.
  3. Remove from the oven and let cool.
Filling Assembly
  1. For the filling, beat together the cream cheese and powdered sugar until smooth.
  2. Spread the filling onto the flat side of one cookie and top with another cookie to make a sandwich.

Notes

Chill your dough for about 30 minutes before baking for better texture. For extra flavor, you can add chocolate chips or substitute cream cheese with mascarpone.
