  • 1 cup old fashioned oats
  • 2 tbsp cacao powder (or unsweetened cocoa powder)
  • 1 cup unsweetened vanilla almond milk
  • 1/4 cup plain Greek yogurt use 2% for creaminess
  • 1 tbsp chia seeds
  • 2 tbsp natural salted peanut butter
  • 1 tbsp honey or pure maple syrup more to taste
  • 1 tsp vanilla extract
  • 1/8 tsp fine sea salt
Optional Toppings
  • sliced bananas
  • chopped peanuts
  • cacao nibs

Method
 

Preparation
  1. Whisk together all the ingredients in a medium mixing bowl until well combined.
  2. Taste your mixture and add more maple syrup or honey if you prefer a sweeter treat.
  3. Portion into two containers, cover them, and refrigerate for at least 4 hours or overnight.
  4. Enjoy chilled, topped with your favorites!

Notes

These oats can be stored in the fridge for about 3-5 days and can be frozen for up to a month. Consider swapping Greek yogurt for a plant-based alternative for a vegan option.
