No-Bake Strawberry Swirl Cheesecake

Ingredients
  

For the crust
  • 1.5 cups 1 1/2 cups graham cracker crumbs
  • 0.5 cups 1/2 cup unsalted butter, melted
For the cheesecake filling
  • 2 cups 2 cups cream cheese, softened
  • 1 cups 1 cup powdered sugar
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1 cups 1 cup heavy cream
  • 1 cups 1 cup fresh strawberries, pureed
  • 0.25 cups 1/4 cup fresh strawberries, chopped (for swirl)

Method
 

Preparation
  1. In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  2. In another bowl, beat the cream cheese until smooth. Gradually add powdered sugar and vanilla, mixing until well combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  4. Add the strawberry puree and chopped strawberries to the cream cheese mixture, folding gently to create a lovely swirl effect.
  5. Pour the filling onto the crust and smooth the top with a spatula.
  6. Refrigerate for at least 4 hours or until set.
Serving
  1. Serve chilled, garnished with extra strawberries if desired.

Notes

For a little extra tang, use lemon juice in the cream cheese mixture. Want a healthier version? Swap out some of the cream cheese for Greek yogurt. You can also freeze individual slices, but be sure to wrap them well in plastic wrap first.
