  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
Wet Ingredients
  • 2 large eggs
  • 1 cup brewed coffee Use fresh coffee for best flavor.
  • ½ cup vegetable oil Can substitute with applesauce for a healthier option.
  • 1 teaspoon vanilla extract

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, coffee, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix.
  5. Pour the batter into the prepared baking pan and smooth the top.
Baking
  1. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow to cool before serving.

Notes

Serve with whipped cream or a scoop of vanilla ice cream. This cake stays fresh for 3-5 days at room temperature and up to a week in the fridge. Store leftovers in an airtight container. Reheat in the microwave for 10-15 seconds.
