  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour Can be substituted with a gluten-free blend.
  • 1 cup chocolate chips Use mini chocolate chips for even distribution.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Mix in the melted butter until well incorporated.
  4. Add the sugar, beaten egg, and vanilla; stir until combined.
  5. Sprinkle the baking soda and salt over the mixture, then mix in the flour until just incorporated.
  6. Gently fold in the chocolate chips.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-65 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let it cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

Serve warm with butter or cream cheese frosting. Store in an airtight container for 3-4 days at room temperature. For longer storage, refrigerate for up to a week or freeze for up to 3 months. Reheat slices in the microwave for a few seconds.
