Ingredients
  

Wet Ingredients
  • 1 1/3 cups mashed bananas Use very ripe bananas for the sweetest flavor.
  • 2 large eggs
  • 1/2 cup unsalted butter Can be swapped for applesauce for a healthier twist.
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon Can be swapped for nutmeg for a different flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F and prepare an 8×4-inch loaf pan by greasing, flouring, or lining with parchment paper.
  2. Transform ripe bananas into a smooth mash to have 1 ⅓ cups.
  3. In a separate bowl, combine flour, baking soda, salt, and cinnamon.
Mixing
  1. Using a hand mixer, whip butter and both sugars until light and airy (about 2 minutes).
  2. Incorporate the eggs one at a time, blending thoroughly after each addition.
  3. Mix in vanilla and the mashed bananas until everything is harmonious.
  4. Gently fold the dry ingredients into the wet mixture, stirring minimally.
Baking
  1. Transfer the batter to your prepared pan.
  2. Bake for 45-60 minutes until a toothpick comes out clean when inserted into the center.
  3. Allow to rest in the pan for 5 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Store in the fridge for about 5 days or freeze wrapped tightly in plastic wrap. Reheat in the microwave before serving.
