  • 3 pieces very ripe bananas (about 1 1/2 cups of mashed bananas)
  • 2 pieces eggs
  • 1/3 cup buttermilk
  • 1/2 cup avocado oil (or any neutral flavored oil)
  • 1 cup organic cane sugar
  • 1/2 cup brown sugar
  • 1 3/4 cup all-purpose flour (sifted)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, mash the bananas until smooth.
  3. Add the eggs, buttermilk, avocado oil, cane sugar, brown sugar, and vanilla extract. Mix well.
  4. Sprinkle in the sifted flour, baking soda, and salt. Gently fold until just combined (don’t overmix!).
  5. Pour the batter into a greased loaf pan.
  6. Bake for 60-65 minutes, or until a toothpick comes out clean.
  7. Let it cool before slicing. Enjoy!

Notes

For best results, use very ripe bananas for maximum flavor. Store banana bread at room temperature for 3-4 days or in the fridge for up to a week. Freeze for up to 3 months.
