- Heat olive oil in a skillet over medium heat.
- Season the salmon with salt and pepper, then pan-sear it until cooked through, about 4-5 minutes per side. Remove from skillet and set aside.
- In the same skillet, add the minced garlic and cook until fragrant.
Cooking
- Add the crushed tomatoes, olives, and capers. Stir and let simmer for about 10 minutes.
- Return the salmon to the skillet, spoon the sauce over the fish, and heat through for a few additional minutes.
- Garnish with fresh parsley before serving.
Notes
Leftovers keep well in the fridge for about 3 days in an airtight container. For reheating, use a quick warm-up in the microwave or on the stove. Consider adding honey for sweetness or red pepper flakes for a kick. Any fish, like cod or tilapia, can be used as a substitute for salmon.
