  • 2 fillets fresh salmon Skin on for better flavor
  • 2 cups crushed tomatoes Canned or fresh
  • 1 cup black olives, pitted and sliced Any variety of black olives can be used
  • 2 tablespoons capers Drained
  • 3 cloves garlic, minced Adjust amount according to taste
  • 2 tablespoons olive oil For cooking
  • Salt and pepper to taste To season the salmon
  • Fresh parsley for garnish Chopped

Method
 

Preparation
  1. Heat olive oil in a skillet over medium heat.
  2. Season the salmon with salt and pepper, then pan-sear it until cooked through, about 4-5 minutes per side. Remove from skillet and set aside.
  3. In the same skillet, add the minced garlic and cook until fragrant.
Cooking
  1. Add the crushed tomatoes, olives, and capers. Stir and let simmer for about 10 minutes.
  2. Return the salmon to the skillet, spoon the sauce over the fish, and heat through for a few additional minutes.
  3. Garnish with fresh parsley before serving.

Notes

Leftovers keep well in the fridge for about 3 days in an airtight container. For reheating, use a quick warm-up in the microwave or on the stove. Consider adding honey for sweetness or red pepper flakes for a kick. Any fish, like cod or tilapia, can be used as a substitute for salmon.
