Ingredients
  

Bread and Fruit
  • 1 loaf French bread Torn into small pieces
  • 3 cups mixed berries (strawberries, blackberries & blueberries) Fresh or frozen
Egg Mixture
  • 6 large eggs
  • 2 cups milk Can substitute with half-and-half or nut milk
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
Creamy Topping
  • 8 ounces cream cheese Dolloped throughout the casserole
  • 1/4 cup powdered sugar For dusting before serving

Method
 

Preparation
  1. Tear the French bread into small pieces and place them in a greased baking dish.
  2. In a bowl, combine eggs, milk, maple syrup, vanilla, cinnamon, and salt. Whisk until well mixed.
  3. Pour the egg mixture over the bread, ensuring all pieces are soaked.
  4. Add dollops of cream cheese and mixed berries throughout the dish.
  5. Cover with plastic wrap and refrigerate overnight.
Baking
  1. The next morning, preheat the oven to 350°F (175°C).
  2. Bake uncovered for 45-50 minutes, or until golden and set.
Serving
  1. Serve warm, drizzled with maple syrup and topped with powdered sugar.

Notes

Leftovers can be stored in the fridge for 3–4 days in an airtight container. To freeze, store individual portions for up to 3 months and thaw overnight before reheating. For a vegan option, substitute flax eggs, plant-based milk, and cream cheese. Add citrus zest for an extra flavor twist.
