Ingredients
  

For the crust
  • 4 pieces pie crusts (thawed, homemade or from 2 boxes store-bought)
For the filling
  • 4 pieces eggs Whisked
  • 1 cup milk
  • 1/2 teaspoon salt
  • 3 ounces Swiss cheese (grated)
  • 3 slices bacon (fried and crumbled)
  • 2 tablespoons green onion (sliced)
  • 1/4 cup ham (cubed) (about 1.5 ounces)
  • 4 cups spinach (wilted) (about 3 ounces)
  • 1 tablespoon red bell pepper (cubed)
  • 2 tablespoons white button mushrooms (trimmed and finely chopped) (about 1/2 ounce)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Use a rolling pin to flatten out the pie crusts on a lightly floured surface. Cut in rounds to fit a muffin tin and place the rounds into the cups.
Assembling the Quiches
  1. In a bowl, whisk 1 egg, 1/4 cup milk, and a pinch of salt. Fill the crust with the egg mixture and top with crumbled bacon and cheese.
  2. Repeat the process with cubed ham and cheese as the filling for the Mini Ham and Cheese Quiche.
  3. Use sautéed spinach with the egg mixture for the Mini Spinach Quiche.
  4. For the Mini Mushroom Quiche, add finely chopped mushrooms and red bell pepper to the egg mixture, and fill the crusts.
Baking
  1. Bake in the preheated oven for about 20-25 minutes or until the tops are golden and puffed.
  2. Let them cool for a few minutes before serving.

Notes

These mini quiches can be enjoyed warm and pair beautifully with a crisp salad. For a lighter texture, whisk the eggs well and let the mixture bubble a bit before baking. Experiment with different cheeses and fresh herbs for added flavor!
