  • 6 large large eggs Fresh eggs recommended for easier peeling.
  • 3 tablespoons mayonnaise Can substitute with Greek yogurt or vegan mayo.
  • 1 teaspoon Dijon mustard
  • to taste Salt
  • to taste Pepper
  • Paprika For garnish.
  • Chopped fresh herbs Optional for garnish; dill or chives are recommended.

Method
 

Preparation
  1. Hard boil the eggs by placing them in a pot of water, bringing it to a boil, covering, and removing from heat for 12 minutes.
  2. Transfer the eggs to an ice bath to cool down.
  3. Once cooled, peel the eggs and cut them in half lengthwise.
  4. Remove the yolks and place them in a bowl.
  5. Mash the yolks with the mayonnaise, Dijon mustard, salt, and pepper until smooth.
  6. Spoon or pipe the mixture back into the egg whites.
  7. Sprinkle with paprika and garnish with chopped herbs if desired.
  8. Serve chilled.

Notes

For best flavor, let the filling chill briefly before working with it. These eggs can be stored in the refrigerator for 3-4 days in an airtight container.
