  • 2 large potatoes, diced Russet or Yukon Gold potatoes work well.
  • 1 medium onion, chopped Yellow onion is preferred for sweetness.
  • 2 cloves garlic, minced Fresh garlic adds better flavor.
  • 1 can (14 oz) diced tomatoes Fire-roasted diced tomatoes can enhance flavor.
  • 1 cup corn (frozen or canned) If using frozen corn, no need to thaw.
Spices and Seasoning
  • 1 tablespoon chili powder Adjust to taste for spiciness.
  • 1 teaspoon cumin Adds a warm, earthy flavor.

For Cooking

Method
 

Preparation
  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and garlic, and sauté until onions are translucent.
Cooking
  1. Add the ground beef, cooking until browned. Drain any excess fat.
  2. Stir in the diced potatoes, diced tomatoes, corn, chili powder, cumin, salt, and pepper.
  3. Cover and cook for about 20 minutes, stirring occasionally, until the potatoes are tender.
  4. Garnish with chopped cilantro before serving.

Notes

Store leftovers in the fridge for up to 3 days or freeze for up to 3 months. Reheat on the stovetop or microwave.
