  • 1 pound ground beef You can use pre-cooked ground beef to cut the cooking time.
  • 2 cups shredded cheese (cheddar or American) Cheddar and American work best for melting.
  • 4 pieces sandwich rolls Toast for extra crunch if desired.
  • 1 medium onion, diced Adds sweetness to the filling.
  • 1 medium bell pepper, diced Can use any color bell pepper.
  • 2 tablespoons taco seasoning Store-bought or homemade.
  • to taste salt and pepper Adjust according to preference.
  • Lettuce, tomato, and avocado for toppings Fresh toppings add color and nutrition.

Cooking
  1. In a skillet over medium heat, brown the ground beef with the diced onion and bell pepper.
  2. Add taco seasoning, salt, and pepper. Stir to combine and cook until the veggies are tender.
  3. Divide the beef mixture into four portions in the skillet.
  4. Place a cup of shredded cheese on each portion and cover until melted.
  5. Toast the sandwich rolls if desired.
  6. Place the beef and cheese mixture on the rolls and top with lettuce, tomato, and avocado.
  7. Serve warm.

Notes

This sandwich keeps well in the fridge for about 3 days. Store in an airtight container. For best reheating, use a skillet on low heat.
