Preparation
- Preheat the oven to 350°F (175°C).
- In a skillet, sauté the chopped onion until translucent, then add the chopped spinach and cook until wilted.
- In a mixing bowl, whisk together eggs, milk, salt, pepper, nutmeg, and oregano.
- Place the pie crust in a pie dish and layer spinach, feta cheese, and shredded cheese.
- Pour the egg mixture over the filling.
Baking
- Bake for 35-40 minutes or until the quiche is set and golden on top.
- Allow to cool slightly before slicing and serving.
Notes
Serve warm or at room temperature. Pairs well with a side of salad or roasted tomatoes. Store leftovers tightly wrapped in the fridge for 3-4 days, or freeze for up to 2 months.
