Ingredients
  

Quiche Filling
  • 1 pie crust 1 pie crust Store-bought or homemade, as preferred.
  • 2 cups 2 cups fresh spinach, chopped Use fresh spinach for best flavor.
  • 1 cup 1 cup feta cheese, crumbled
  • 1 cup 1 cup shredded cheese (like mozzarella or cheddar) Choose your favorite melting cheese.
  • 4 large 4 large eggs
  • 1 cup 1 cup milk Whole or reduced-fat milk can be used.
  • 1/2 cup 1/2 cup onion, chopped
  • 1/2 teaspoon 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon 1/4 teaspoon black pepper
  • 1/4 teaspoon 1/4 teaspoon nutmeg Freshly grated nutmeg is recommended.
  • 1/2 teaspoon 1/2 teaspoon dried oregano Dried herbs can be substituted with fresh.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, sauté the chopped onion until translucent, then add the chopped spinach and cook until wilted.
  3. In a mixing bowl, whisk together eggs, milk, salt, pepper, nutmeg, and oregano.
  4. Place the pie crust in a pie dish and layer spinach, feta cheese, and shredded cheese.
  5. Pour the egg mixture over the filling.
Baking
  1. Bake for 35-40 minutes or until the quiche is set and golden on top.
  2. Allow to cool slightly before slicing and serving.

Notes

Serve warm or at room temperature. Pairs well with a side of salad or roasted tomatoes. Store leftovers tightly wrapped in the fridge for 3-4 days, or freeze for up to 2 months.
