  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes canned
  • 1 can chickpeas, rinsed and drained
  • 2 cups fresh spinach
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • to taste salt and pepper
  • to taste lemon juice for serving

Method
 

Preparation
  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the onion, carrots, and celery for about 5 minutes or until they soften.
  3. Add in the garlic and sauté for another minute until fragrant.
  4. Pour in the vegetable broth and add the canned tomatoes, chickpeas, paprika, and cumin. Stir it all together.
  5. Bring the mixture to a simmer, then let it cook for about 15 minutes.
  6. Toss in the spinach and let it simmer for an additional 5 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot with a splash of lemon juice on top.

Notes

This soup is great for leftovers and can be stored in an airtight container in the fridge for 3-4 days or frozen for up to 3 months. Reheat on the stove or microwave, adding extra broth if needed.
