Ingredients
  

For the crust
  • 1 cup crushed graham crackers
  • 1/2 cup melted butter Ensure the butter is fully melted.
For the filling
  • 2 cups fresh strawberries, pureed You can use frozen strawberries after thawing.
  • 1 cup cream cheese, softened Let it sit at room temperature for easier mixing.
  • 1/4 cup powdered sugar Adjust sweetness to your preference.
  • 2 tablespoons matcha powder
  • 1 cup whipped cream Gently fold in to maintain lightness.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix crushed graham crackers and melted butter until combined.
  3. Press the mixture into the bottom of a lined baking dish to form a crust.
  4. Bake for 10 minutes and let cool.
Making the Filling
  1. In a separate bowl, beat together cream cheese and powdered sugar until smooth.
  2. Add the pureed strawberries and matcha powder to the cream cheese mixture, and mix until combined.
  3. Gently fold in the whipped cream to keep it light and fluffy.
Assembly
  1. Pour the matcha strawberry filling over the cooled crust and smooth it out.
  2. Refrigerate for at least 4 hours or until set.
  3. Cut into bars and serve chilled.

Notes

These bars can be stored in the fridge for up to 5 days, or frozen for longer storage. Use room temperature ingredients for better mixing, and feel free to swap strawberries for other fruits like raspberries or mango.
