  • 3 pieces ripe bananas, mashed The riper, the better!
  • 1/2 cup maple syrup
  • 1/3 cup melted butter Can be substituted with coconut oil for a vegan option.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped walnuts or pecans Optional ingredient.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Stir in the melted butter until fully combined.
  4. Mix in the maple syrup and vanilla extract.
  5. Sprinkle the baking soda and salt over the mixture and mix well.
  6. Add the ground cinnamon, followed by the flour, and stir until just combined.
  7. If desired, fold in the chopped nuts.
  8. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Slice warm and slather with butter for indulgence. Pairs well with coffee or tea. Store at room temperature for about 3 days, or freeze for up to 3 months.
