Zucchini Fries Ingredients
  • 2 medium zucchini Cut into sticks or fries
  • 1/2 cup breadcrumbs (whole wheat or regular)
  • 1/4 cup grated Parmesan cheese (optional) Can be omitted for vegan version
  • 1 tsp garlic powder
  • 1 tsp paprika
  • to taste Salt and pepper
  • as needed Cooking spray or olive oil

Method
 

Preparation
  1. Preheat your air fryer to 400°F (200°C).
  2. Cut the zucchini into sticks or fries.
  3. In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  4. Dip each zucchini stick in the mixture, making sure they’re well coated.
  5. Arrange the zucchini fries in the air fryer basket in a single layer.
  6. Spray lightly with cooking spray or drizzle with olive oil.
Cooking
  1. Cook for about 10-12 minutes, or until golden and crispy, shaking the basket halfway through for even cooking.
Serving
  1. Serve warm with a dipping sauce of your choice.

Notes

For extra crunch, use Panko breadcrumbs. Store leftovers in an airtight container for 3-4 days and reheat in air fryer.
