Baking Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In another bowl, cream the butter and sugar until light and fluffy.
- Add the lime zest, egg, vanilla extract, and lime juice. Mix until combined.
- Gradually incorporate the dry ingredients into the wet ingredients until just combined.
- Scoop out tablespoons of dough, roll into balls, then roll in sugar.
- Place dough balls on the prepared baking sheet with space between them.
- Bake for 8–10 minutes or until edges are lightly golden.
- Let cool for a few minutes before transferring to a wire rack to cool completely.

Cookies stay fresh for up to 1 week in an airtight container at room temperature. Freeze for up to 3 months.
