  • 8 oz pasta (spaghetti or linguine)
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth or white wine Use chicken broth for more flavor.
  • 1 lemon, juiced and zested For a zesty flavor.
  • 1/4 cup fresh parsley, chopped For garnish.
  • Salt and pepper to taste
  • Red pepper flakes (optional) Add for extra heat.

Method
 

Cooking
  1. Cook the pasta according to package instructions until al dente, then drain.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add shrimp to the skillet and cook until pink and cooked through, about 2-3 minutes.
  4. Pour in the chicken broth or white wine, and add lemon juice and zest. Stir to combine.
  5. Add the cooked pasta to the skillet, toss everything together, and cook for another 1-2 minutes until heated through.
  6. Stir in chopped parsley, and season with salt, pepper, and red pepper flakes if desired.
  7. Serve hot, garnished with additional parsley if preferred.

Notes

Can dress the dish with additional parsley, serve with salad, or pair with white wine. Leftovers can be refrigerated for up to 3 days or frozen for 2 months.
