  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice Freshly squeezed for best flavor.
  • 1 tablespoon paprika
  • 2 cloves garlic, minced
  • to taste salt and pepper
  • as needed lemon slices for garnish
  • as needed fresh herbs (parsley or thyme) for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix together the olive oil, lemon juice, paprika, minced garlic, salt, and pepper.
  3. Rub the mixture all over the chicken thighs, ensuring every nook and cranny is coated.
  4. Place the seasoned chicken in a roasting pan and add lemon slices on top for extra zing.
Cooking
  1. Roast in the preheated oven for 30-35 minutes or until your chicken turns a beautiful golden brown and is cooked through.
  2. Garnish with fresh herbs before serving.

Notes

For added heat, include a pinch of cayenne pepper. You can also marinate the chicken for an hour for a richer flavor. Suitable for variations using tofu or seitan as a meat-free option.
