Preparation
  1. In a large skillet, heat olive oil over medium heat.
  2. Add minced garlic and cook until fragrant, about 1 minute.
Cooking
  1. Add the shrimp to the skillet and season with salt and pepper. Cook until shrimp are pink and opaque, about 3-4 minutes.
  2. Meanwhile, cook orzo according to package instructions.
  3. Drain the orzo and add it to the skillet with the shrimp.
  4. Stir in lemon juice, lemon zest, and Parmesan cheese. Mix well to combine.
  5. Cook for an additional 2-3 minutes, allowing flavors to meld.
  6. Garnish with fresh parsley and serve warm.

This dish can be stored in the fridge for about 3-4 days in an airtight container. For meal prep, warm it up in the microwave or on the stovetop with a splash of water.
