  • 2 tablespoons Granulated Sugar Can be reduced or replaced with a sugar substitute.
Wet Ingredients
  • 1 cup Whole Milk Can be substituted with any milk or plant-based alternative.
  • 4 tablespoons Unsalted Butter Replace with vegetable oil for a dairy-free option.
  • 1 large Large Egg A flax egg can be used for a vegan option.
  • 1 teaspoon Vanilla Extract Omit for a less sweet version.
Fillings
  • 6 small Small Eggs Medium eggs can be used but monitor cooking time.
  • 6 slices Halal Turkey Bacon Substitute with chickpea or vegetable bacon for a vegetarian option.
  • 1 cup Shredded Mozzarella Cheese Substitute with cheddar or non-dairy cheese if desired.
  • 2 tablespoons Chopped Green Onions Can replace with chives or omit if not available.
  • 1 tablespoon Sesame Seeds For a nutty crunch.
  • 1 tablespoon Fresh Parsley To add a burst of color and flavor.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a bowl, mix flour, baking powder, salt, and sugar together. Set aside those dry ingredients.
  3. In another bowl, whisk together milk, butter, egg, and vanilla extract until creamy.
  4. Combine the wet and dry ingredients until just mixed.
Baking
  1. In your greased baking dish, pour half of the batter.
  2. Place cooked bacon, mozzarella, and half of the small eggs on top.
  3. Pour the rest of the batter over this and add the remaining eggs.
  4. Sprinkle with green onions, sesame seeds, parsley, and black pepper.
  5. Drizzle with hot sauce if you’re feeling spicy!
  6. Bake for 25-30 minutes until golden and set.

Notes

Check your dish at the 25-minute mark; it shouldn’t be jiggly in the middle! Store in an airtight container in the fridge for about 3-4 days and freeze slices for up to a month.
