  • 1 lb kielbasa, sliced
  • 4 medium potatoes, diced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • to taste Chopped parsley for garnish

Method
 

Cooking
  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and minced garlic, cooking until softened.
  3. Toss in the sliced kielbasa and cook until browned.
  4. Stir in the diced potatoes, chicken broth, smoked paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for about 15-20 minutes or until potatoes are tender.
  6. Stir in the heavy cream and cook for an additional 5 minutes.
  7. Serve hot, garnished with chopped parsley.

Notes

Store leftovers in the fridge for 3-4 days, or freeze for 2-3 months. Reheat on the stove for 5-10 minutes, adding cream if needed.
