Casserole Base
  • 1 pound ground beef Can substitute with ground turkey or beans for a vegetarian option.
  • 1 can diced tomatoes
  • 1 can corn
  • 1 packet taco seasoning Can use homemade seasoning if preferred.
Cheese Mixture
  • 8 ounces cream cheese Softened
  • 1 cup mozzarella cheese, shredded
  • 1 cup cheddar cheese, shredded
Casserole Topping
  • 1 can biscuit dough Can explore flavored biscuit dough for variation.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef, then drain excess fat.
  3. Stir in diced tomatoes, corn, and taco seasoning.
  4. In a separate bowl, soften cream cheese and mix until smooth, then add to the meat mixture.
  5. Spread the biscuit dough in the bottom of a greased casserole dish.
  6. Pour the meat mixture over the biscuit base.
  7. Top with mozzarella and cheddar cheese.
Baking
  1. Bake for 25-30 minutes, or until the biscuits are golden and the cheese is bubbly.
  2. Let it cool slightly before serving.

Notes

Serve with a fresh salad or zesty salsa. Best enjoyed fresh but can be stored in the fridge for 3-4 days or frozen for 2-3 months. Reheat in the oven for best results.
