Ingredients
  

Peach Mixture
  • 4 cups fresh peaches, sliced Use ripe peaches for best flavor.
  • 1 cup granulated sugar Divided use: 1/2 cup for the peach mixture, 1/2 cup for the batter.
  • 1 tablespoon lemon juice To enhance the flavor of peaches.
  • 1 teaspoon vanilla extract
Batter
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted Let cool slightly before mixing with milk.
  • Cinnamon to taste Cinnamon (optional, for sprinkling) Add for extra flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine sliced peaches, 1/2 cup sugar, lemon juice, and vanilla extract. Pour this mixture into a greased baking dish.
  3. In another bowl, mix flour, baking powder, salt, and the remaining sugar.
  4. Stir in milk and melted butter until fully combined.
  5. Pour the batter over the peach mixture in the baking dish without stirring.
  6. Optionally, sprinkle with cinnamon.
Baking
  1. Bake for 45-50 minutes until golden brown and bubbly.
Serving
  1. Serve warm with ice cream if desired.

Notes

This cobbler keeps well in the fridge for about 3-5 days. For longer storage, freeze for up to 3 months and reheat in the oven.
