  • 2 tablespoons jerk seasoning Adjust for spiciness as needed.
  • 1 tablespoon oil For grilling.
For the Sandwich
  • 4 pieces sandwich rolls Soft rolls complement the sandwich nicely.
  • 1 slice pineapple Grill until caramelized for extra sweetness.
  • 1 cup coleslaw mix Add a crunch element to the sandwich.
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar For added tang.
  • Salt and pepper to taste salt and pepper

Method
 

Preparation
  1. Season the chicken thighs with jerk seasoning, then let them marinate for at least 30 minutes.
  2. While the chicken is marinating, mix the coleslaw mix, mayonnaise, apple cider vinegar, salt, and pepper in a bowl to prepare the coleslaw.
Cooking
  1. Preheat your grill to medium heat.
  2. Grill the chicken thighs for about 6-7 minutes on each side, until fully cooked.
  3. Grill the pineapple slice for about 2-3 minutes on each side until caramelized.
Assembly
  1. Assemble the sandwich by placing the grilled chicken on the roll, adding the grilled pineapple, and topping with coleslaw.
  2. Serve and enjoy!

Notes
