Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons jerk seasoning Marinate chicken
  • 4 pieces sandwich buns
For the Toppings
  • 1 cup grilled pineapple slices Grill until caramelized
  • 1 cup coleslaw mix For freshness
  • 1/4 cup mayonnaise For coleslaw dressing
  • 1 tablespoon lime juice Adds zest to coleslaw
  • 1 pinch Salt and pepper To taste
  • 1 tablespoon Oil For grilling

Method
 

Preparation
  1. Marinate the chicken breasts with jerk seasoning for at least 30 minutes.
  2. Preheat the grill to medium-high heat.
Cooking
  1. Grill the chicken for about 6-7 minutes on each side until fully cooked.
  2. While the chicken is grilling, mix coleslaw mix with mayonnaise, lime juice, salt, and pepper in a bowl.
  3. Grill the pineapple slices for 2-3 minutes on each side until caramelized.
Assembly
  1. Assemble the sandwiches by placing the grilled chicken on the bottom half of each bun, topping with grilled pineapple and coleslaw, and closing with the top half of the bun.
  2. Serve immediately.

Notes

Serve with sweet potato fries or a green salad. Store leftovers in the fridge for up to 3 days, keeping components separate.
